Silver to crimson with bright blue spots. Smaller snapper are commonly called pinkies, and the species occurs along Victoria’s coastline.

Whole roasted snapper

Roasted whole snapper ready to serve

Ingredients

Method

  1. Heat the oven to 210°C. Pat the snapper dry and make three shallow cuts on each side.
  2. Season inside and out. Fill the cavity with half the lemon, garlic and herbs.
  3. Scatter tomatoes in a roasting tray, place the fish on top and add the remaining lemon, garlic and herbs.
  4. Drizzle with olive oil, pour the wine or stock around the fish, then roast for 25–30 minutes until the flesh flakes cleanly at the thickest point.
  5. Rest for five minutes and spoon the tomatoes and pan juices over the fish to serve.
